I know I'm beginning to sound like a broken record on
this issue, but this goes to show how dear you all are to me. It’s not just
what you eat that’s important, but also the method of preparation goes a long
way to determine the quality of food going into your body. For instance we all
know that steamed food is healthier than fried food.
Let's talk about the microwave oven –
again! We already know the benefits of the convenience of a microwave oven so
this weekend let’s do a bit of research on what harmful effects a microwave
oven may have long-term.
The picture on the top left is my idea of
a completely nuked broccoli. It doesn’t look appealing on the outside so I
don’t imagine it will be much different when it gets eaten, or better still
offer much nourishment when it gets inside of us.
A study published in the November 2003
issue of The Journal of the Science of Food and Agriculture found that broccoli
zapped in the microwave with a little water lost up to 97 percent of the
beneficial antioxidant chemicals it contained. By comparison, steamed broccoli
lost 11 percent or fewer of its antioxidants.
Dr. Hans Hertel, a Swiss food
scientist, carried out some studies on the dangers of the microwave and he
concluded that microwave cooking significantly altered foods nutrients
resulting in a deterioration of the blood of the participants of the study. His
findings showed that microwave cooking resulted in
- Increased cholesterol levels
- More leukocytes, or white blood cells,
which can suggest poisoning
- Decreased numbers of red blood cells
- Production of radiolytic compounds
(compounds unknown in nature)
- Decreased haemoglobin levels, which
could indicate anaemic tendencies
I think it would be worth doing some more
research before warming some milk for your hot cuppa this weekend. While you’re
doing that, bring out the good old milk pot (which has been a faithful friend
for generations now), pour some milk in it, turn on the stove and before you
can say ‘voila!’ you’ve got some safely warmed up milk!
